Ragi Adai / roti


Ragi Adai is a healthy breakfast or snack item that can be made very quickly and with very few ingredients that are available at home.

I have made this adai / roti with drumstick leaves, you can add any of the greens that are available, or simply make it with just onions.

Ingredients required :

ragi flour 2 cups
drumstick leaves 1 cup
onion 1 big sized
dry red chilies 3-4
small piece of jaggery
ginger 1/2 inch piece 
mustard 1/4 teaspoon
jeera 1/2 teaspoon
urad dal 1/2 teaspoon
curry leaves
oil

Preparation:

 Heat oil in a pan


Add mustard and allow it to splutter, now add jeera, urad dal, ginger, dry chili, and curry leaves and mix for a while. 






Now add onion and mix well until the raw flavor of the onion goes and add the cleaned and washes drumstick leaves and mix until the leaves are cooked well.




Add jaggery required amount of salt and mix and pour the required amount of water.




Heat up the water for very few seconds and remove from the heat.
(don't overheat the water the batter will turn sticky and you will not get proper adai / roti ) quickly add the flour and mix well.

The batter should look like this and consistency can be changed by adding a little water.
Now heat up a dosa pan and apply oil evenly and pour the batter and wait for a while.
Flip the adai / roti and cook well on both the sides .

murunga keerai ragi adai/roti is ready to serve.

serve hot with chutney or raita.
